Add Nourishing Joy to the Festivities with Quinoa Malpua

Ingredients:
For Malpua Batter:
- ½ cup plain flour / all purpose flour
- ½ cup Quinoa Flour by Nourish You
- ½ cup semolina
- ¼ cup sugar
- ½ tsp fennel powder
- ¼ tsp cardamom powder
- ½ cup milk
- Water, as required
- Oil, as required for deep frying
- Rabri for serving(optional)
- Nuts & edible seeds for garnishing
For Sugar Syrup:
- 1 cup sugar
- ½ cup water
- ¼ tsp cardamom powder
- few threads of saffron
Method:
- In a large mixing bowl add plain flour, quinoa flour, semolina, sugar, fennel powder, cardamom powder and mix them well together.
- Pour the milk and stir the malpua batter well to ensure there are no lumps in it.
- Add water as required until the batter forms into a smooth pouring consistency.
- Continue to whisk the batter for 5 minutes.
- Cover the batter and allow it to rest for nearly 30 minutes.
- To prepare the sugar syrup, heat a large saucepan over medium flame.
- Pour the water into the saucepan and add sugar to it. Stir it well until the sugar dissolves completely.
- Add the cardamom powder and saffron to the saucepan and bring it to a boil. Then bring it down the stove before soaking the cooked malpuas in it.
- Heat a deep fry-pan on low to medium flame and grease it with an adequate amount of oil or ghee.
- Pour a dollop of malpua batter on the heated pan to form the shape of a circular malpua. Flip the malpua to cook evenly on both sides until they turn golden brown.
- Repeat the previous step for the remaining batter and bring down the cooked malpuas onto a plate.
- Soak each malpua into the hot sugar syrup for about 4 to 5 minutes and strain excess sugar syrup from the malpuas.
- Garnish the malpua with dry fruits, nuts or edible seeds of your choice and serve hot along with creamy Rabri.
