An Ambrosial Quinoa Carrot Cake

Each bite of this nutritiously yummy delight promises to make your tea-breaks merrier. Goodness of carrot blended in with the rich superfood quinoa nourishes you with protein, dietary fiber and vitamin A. 

Ingredients

  • 2 cups Quinoa Flour by Nourish You
  • ½  cup Cocoa Powder
  • 2 tsp Instant Coffee Powder
  • ½ cup Oil
  • ¾ cup Milk
  • 1 cup Sugar 
  • 2 Flaxseed Eggs 
  • 1 tsp Vanilla Extract
  • 2 tsp Baking Powder
  • 1 cup Grated Carrot 
  • Pinch of Salt

For the glaze:

  • ¼ cup Melted Butter 
  • 2 cups Icing Sugar
  • 2 to 4 tbsp warm milk (as required based on consistency)
  • Pinch of Salt
  • ½  tsp Almond Essence 

 Method:

  1. In a large mixing bowl, add the eggs, oil, vanilla essence and sugar.
  2. Whisk them together using an electric beater for about 3 minutes on medium speed until the mixture appears light in color and fluffy in texture.
  3. Keep this egg mixture aside and preheat the oven at 180 degree celsius, while greasing the cake pan with butter and dusting with flour.
  4. Take another large bowl and add the quinoa flour into it along with cocoa powder and coffee powder.
  5. Sieve these dry ingredients until they mix well together.
  6. Now add grated carrot to the flour mixture and pour milk as required while stirring them together until the mixture forms into a pouring consistency. Mix well to ensure no lumps of flour remain in this mixture.
  7. Pour the flour mixture into the egg mixture bowl and blend them together until well combined.
  8. Pour the entire batter into the greased baking pan and spread evenly before baking the cake for 35-40 minutes. Insert a skewer in the middle of the cake pan to check if the cake is baked well.
  9. Allow the cake to cool completely before you begin to glaze the cake or decorate with butter-cream frosting and toppings of your choice.

For the glaze:

  1. Sift the icing sugar and salt together and add it to a mixing bowl. 
  2. Melt the butter in a saucepan and pour it into the sugar mixture bowl. Stir the mixture well.
  3. Pour the warm milk into this mixture as required until it appears to be in dripping consistency. 
  4. Add the almond essence to this mixture and beat together until smooth and creamy.
  5. Drizzle the warm glaze over the cake.
  6. Top the cake with confetti, nuts and edible seeds of your choice.
